So a few years ago I tried the home made pasta thing too, and with a lot of success. I found that if you’re flavoring the pasta with something, try to be subtle. One of my grand failures was a currified pasta that just had way too much spice in it, no matter what sauce I used, it came out like a bad Indian movie. Sadly, the pasta maker has languished in my kitchen for the last ten years, but now we’re inspired to make something, and my wife and I are going to try a variation on your raviolis.
